本研究室では、セレノネインが、強力なラジカルスカベンジャーであることから、天然物由来の水溶性抗酸化物質として健康食品製造や食品加工に利用可能です。セレノネインは、マグロ類、サバ類などの魚介類に高含有することから、セレノネイン含量を測定してデータベース化に取り組み、缶詰、レトルト食品など様々な形態の食品を開発し、商品化を目指します。さらに、セレノネイン濃縮物を用いて抗加齢、抗メタボリックシンドローム効果をもつ特定保健用機能食品を開発いたします。また、酸化ストレスを伴うアポトーシス誘導シグナル伝達経路の研究を遂行しています。とくに、抗酸化物質セレノネインに伴う生存シグナル経路に注目しております。

遠隔支援ツールを用いた継続支援によって、利用する方たちが健康になれる、または病気の予防が可能になるプログラムづくりを目指しています。また、新たな「抗炎症食」という指標が、日本人の健康づくりにあてはまるのかについて、今は特に妊婦さんを中心に研究しています。
次世代の健康づくりを思うと、思春期から妊娠期の栄養は大切です。しっかり食べて健康的な体重を維持すること、貧血(かくれ貧血を含む)を予防すること、そのことによって毎日を活動的に心地よく過ごせることを願って、『食べること』の大切さを伝えていきたいです。

消防機関で21年間の救急現場活動の経験を基に、救急現場活動のあらゆる諸課題を解決するための研究活動を行っています。
また、救急救命士国家試験委員や救急救命士標準テキスト編集にも携わり、現在は消防庁消防研究センターとの共同研究、厚生労働科学研究費補助金地域医療基盤開発推進研究事業、消防防災科学技術研究推進制度の開発研究を行っています。
