本研究室では、セレノネインが、強力なラジカルスカベンジャーであることから、天然物由来の水溶性抗酸化物質として健康食品製造や食品加工に利用可能です。セレノネインは、マグロ類、サバ類などの魚介類に高含有することから、セレノネイン含量を測定してデータベース化に取り組み、缶詰、レトルト食品など様々な形態の食品を開発し、商品化を目指します。さらに、セレノネイン濃縮物を用いて抗加齢、抗メタボリックシンドローム効果をもつ特定保健用機能食品を開発いたします。また、酸化ストレスを伴うアポトーシス誘導シグナル伝達経路の研究を遂行しています。とくに、抗酸化物質セレノネインに伴う生存シグナル経路に注目しております。

我々が生活している環境の中には、人工的に作られた様々な化学物質が存在し、その化学物質は物性を変化させながら生体内に入り蓄積している。その蓄積に伴い、生体影響が生じ健康を脅かす可能性が考えられている。そんな化学物質が生体免疫に与える影響について研究を行っている。アレルギーは今や大きな社会問題であり、なかでも環境化学物質曝露によるアレルギー悪化のメカニズム解明は重要な研究分野である。
